Based in East Lothian, Scotland, our smokehouse has developed and refined recipes over many years. Using traditional methods, salmon and trout is cured by hand, then slowly smoked over oak shavings, to develop a rich and sumptuous flavour. Fish is sourced in Scotland, from RSPCA accredited farms. We also smoke haddock, mackerel, cheese and butter.
