The Island Smokery
The company began like most good ideas, by accident. We ran a delicatessen and had some out of date mature cheddar so I decided to try smoking it. And the results, after melting considerable amounts of cheese, proved worthwhile. Our cheese has now won many awards over the last few years including silver and bronze in the same category at the World Cheese Awards 2010.
Our product differs from others in the market as it is hand cut and naturally smoked. We use recycled wood from a local craftsman who makes bodhran drums using specialist woods. This eliminates his waste product, whilst giving our cheese a unique flavour.
