Our rainbow trout comes from a small, independent trout farm just 15 miles from our smokehouse, in the Scottish borders.  After smoking it has an amazing depth of flavour which is truly distinct and utterly delicious.  It can be eaten warm or cold, flaked into pasta, tossed through a salad, or just straight from the packet.
