Pure spirit is cut with 100% raw, unpasteurised birch sap and seasoned with wild birch flavours harvested throughout the seasons for a smooth yet complex drink to be enjoyed neat or mixed.

A refreshing alternative to gin without the resinous, pine flavours of juniper.

FLAVOUR: Fresh wintergreen, with subtle notes of cucumber and eucalyptus and rosemary, and a delicate hint of green peppercorns.

MOUTHFEEL: Soft, silky and smooth (the 1% natural sugars of the sap give BIRCH its beautiful texture and luxurious creaminess on the palate. It might sound strange to say but in terms of mouthfeel it feels more like a whisky than a gin or vodka)

SERVES:

Neat - Pop it in the freezer and serve super chilled. Served in this way gives the spirit a beautifully syrupy texture and can be enjoyed as a schnapps or even as a one-pour Martini, the delicate botanicals acting like the vermouth. 

B & T - Build in exactly the same way as a gin & tonic. Without the resinous, piney quality of juniper it's a lovely, light and refreshing alternative, particularly when garnished with cucumber, fresh mint or apple. We recommend a light tonic but works equally well with flavoured, we were pairing it with Fevertree elderflower tonic in the summer which was delicious!

Classic Martini - 2 parts BIRCH, 1 part vermouth, stirred down over ice and strained into a Martini glass. Garnish with a choice of lemon twist or olive depending on your preference. Super elegant and clean with that lovely smooth texture from the birch sap.
